Root Beer Pulled Pork

I am so happy with this recipe. Only three ingredients (four, if you count the rolls) and it is convenient! I found it on SixSistersStuff.com. The meat was a hit! It was just sweet enough (like you want a good pulled pork to be) and really tender. My roasts were a little frozen still, so I put them on high for about 4 hours and then put them on low till we ate 2-3 hours after that. Delicious!
Slow Cooker Root Beer Pulled Pork Sandwiches
Ingredients:
1 (3 pound) pork roast (I used boneless)
1 (12 oz) can root beer
(since I cooked mine on high, I actually added a second can of root beer after the first four hours because it had reduce slightly and wasn't covering the meat)
1 (18 oz) bottle of your favorite BBQ sauce (we love Famous Dave’s Rich and Sassy)
8 hamburger buns (we used dinner rolls!)
Directions:
Spray your slow cooker with non-stick cooking spray. Place roast inside slow cooker and pour the root beer over the meat. Cook on low for about 6-8 hours (or until meat easily shreds).
Take the roast out of the slow cooker and shred using two forks (it should just fall apart). Drain the root beer out of the slow cooker and place the shredded roast back inside. Stir in the bottle of BBQ sauce. Keep warm in the slow cooker until serving.
Place meat on hamburger buns and serve.
Makes 8 servings.

Honey Sesame Chicken

I found this recipe while I was looking for crockpot meals because it is too hot to cook on the stove and certainly too hot to use the oven. It was really good! Hubby liked it a lot, too. That is a huge plus. My sauce didn't thicken up as much as I would have liked, so I'll use more cornstarch next time. I will definitely be making this again!


Slow Cooker Honey Sesame Chicken

Ingredients:
4 boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
2 tablespoons vegetable oil (could also use olive oil or canola oil)
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional – doesn’t really add heat, just adds more flavor)
4 teaspoons cornstarch dissolved in 6 Tablespoons water
Sesame seeds
Directions: 
Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles.
*You can also sprinkle more red pepper flakes on top if you want more heat.
